Lockdown didn’t just lead to lockdown for the hospitality industry – it also inspired new food and drink businesses across the UK – and for one trio, it inspired Birmingham’s first Whiskey distillery!
The Spirit of Birmingham distillery began production in May 2021 in south east Birmingham based on the plan & vision of Joan, Xanthe & Anthony Dillon.
They describe themselves as three proud Brummies, with a good dollop of Irish heritage; born, educated & living in “The City of 1000 Trades”, and say their idea for the distillery was nurtured by many evenings spent in great company, tasting & debating great spirit. Planning commenced a couple of years ago and then lockdown provided the time to plan and organise.
Spirit of Birmingham was borne from a love of uncomplicated quality, alongside a desire to create, innovate and give the second city it’s own grain to glass distillery.
Spirit of Birmingham Ltd will begin laying down casks of spirit for a minimum of three years – and to ease the anticipation, they will be producing a unique style of Vodka and limited-edition batches of craft beer, all using specially selected traditional heritage varieties of grain, chosen for depth of flavour.
